Breaded Chicken Breasts (with spinach & basil/brown mustard)

Ingredients:

Directions:

  1. Preheat oven to 400°F.
  2. Generously butter baking dish, spread spinach over bottom.
  3. Sprinkle lemon juice over spinach.
  4. Pat chicken dry, place on top of spinach.
  5. In a small bowl,mix together basil or parsley, garlic, mustard, oil, mayonnaise and soy sauce.
  6. Spread mixture over chicken.
  7. Sprinkle bread crumbs evenly over chicken and lightly with cayenne pepper.
  8. Bake 20-25 minutes until juices run clear.
  9. Makes 4 servings.
