Ingredients:

Directions:

  1. Saute onion and mushrooms
  2. Remove
  3. Beat eggs.
  4. Add salt and pepper
  5. Put in hot pan you may need to add more butter
  6. Cook moving the egg so it cooks
  7. Add mushroom and onions
  8. Add swiss cheese and spinach
  9. Cook til egg is set and cheese melting
  10. Flip in thirds
  11. Plate
  12. Top with hollandaise sauce and tomatoes.
