Ingredients:

  • 1/2 cup shortening
  • 1 cup packed brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 1/2 tsp vanilla
  • 2 1/4 cups flour
  • 1/4 tsp salt
  • 1 cup oats
  • 1 cup mini marshmallows

Directions:

  1. In a large mixing bowl, cream the butter, shortening and sugars.
  2. Add eggs, one at a time, beating after each addition.
  3. Beat in the vanilla.
  4. Combine flour, soda and salt, gradually add to creamed mixture.
  5. Stir in the oats, chocolate chips and mini marshmallows.
  6. Drop by heaping teaspoonfuls, 2 inhes apart onto GREASED cookie sheets.
  7. Bake at 350 for 11-13 minutes or until golden.
  8. Cool 1-2 minutes before removing to wire racks to cool completely.
